LaurenMakes at the Apple store

My cousin and I stopped by the Apple store a couple of weeks ago and got to meet an Ipad for the very first time. They are so cool! Of course, I had to see the little blog on one of these guys. And I didn’t care how big of a nerd I looked like taking a picture of it. :)

Crib Sheets

Dana over at MADE has this easy tutorial for making a fitted crib or toddler sheet.  No reason not to have the perfect pattern when you can make your own. :)  Love that crib too!

Mommy Love

I may be a little partial, but I’m pretty sure I have one of the best moms out there.

Restaurant Style Salsa

With Cinco de Mayo coming up tomorrow, I thought I’d throw a little Mexican flavor your way. I will fully admit that I have a salsa addiction. That’s mostly what brought me to wanting to create my own salsa at home. I was spending a ridiculous amount of money on that jarred Pace stuff! Luckily, my friend Bev came to the rescue. Her and her mom cracked the Mexican restaurant salsa code. It’s so easy and delicious! I haven’t bought any of the jarred stuff in over 6 months and I’m sure I’ll never go back.

So let’s get started…the fiestas will be here soon and you need to get this stuff in the fridge!

Here’s what you’ll need.

  • 1/4 cup sliced jalapeños
  • Garlic Salt
  • Table Salt
  • Whole Peeled Tomatoes (big can or two regular sized cans)

Yep, that’s it.

Open up your whole peeled tomatoes and pull out all but 2 or 3. Pop those in your food processor and blend until desired consistency. The husband hates ‘chunky’, so I really puree this stuff down.  Once that’s blended, pour into a bowl.

Then put the remaining tomatoes and juice into the processor along with 1/4 cup of jalapeños. 1/4 cup gives a pretty good kick. A smidge spicier than what I’d consider “Mild”. If you like it really spicy, give a little more or a little less to make it milder. Blend this mixture up well to make sure you chop up all those little peppers!

Pour this mixture in with the first. Add garlic salt and salt to taste and stir well. Then refrigerate. I like to let it sit in the fridge at least a couple of hours to let all the flavors start working together. We’ve found the longer it stays in, the bolder the batch.

You can jar this up and pass on to friends for a Cinco de Mayo treat….

Or bust out the chips and eat it all yourself!

Murphy Love

Mark and I are turning more and more into those “crazy dog people”. Murphy is totally our ‘little boy’ and we love hanging out with him! He gives us so much unconditional love and puts a ton o’ happy into every day. So I’m going to be one of those moms and post some pictures of him, just because I can! :)

Birthday recap

I had a very happy 26th birthday! We starting celebrating on Wednesday and kept it going through the weekend. :)

I met Mark downtown for lunch on Wednesday. I love when I get to do this. I would LOVE to live in a walking city and walking to a restaurant from Mark’s work is always good for pretending. We had Mexican and it was yum-o.

The church we got married at is right next to Mark’s work, so I had to get a picture!

Murphy always gives me lots of love when I get home every day, but I think he gave me extra kisses for my birthday :)

I came home on Wednesday to find a cake in the oven. My Markus made me a cake! He’s never baked anything before in his life. Here he is putting candles on top in the shape of a cursive L. Creative boy :) He baked it in an oval Corningware casserole dish…which led to its nickname, “The Rock”. Watching him transfer the cake to the cake plate and  ice it was hilarious! He’s so cute and sweet. :)

He also got me this adorable purse! I love it so much. I haven’t gotten a new purse in almost 3 years! There’s so many pockets inside to keep things organized and the yellow makes me happy. :)

Thursday night we headed to a Baron’s baseball game with our neighbors. I got free box tickets from my company and they were great seats!

Friday we went out to Outback and had so.much.food. We really over did it! But man were those cheese fries gooood.

Saturday and Sunday have been filled with lots of rest and Murphy/Mark cuddle time. My two boys know how to make me happy!

I got lots of sweet cards from friends and family and some play money from Mom and Granny. I’ve already had a little mini shopping spree at Hobby Lobby with that. Mom even sent a Paper Source gift card! And Granny sent coupons with my card! The women in my family know me all too well. :)

It was a fantastic time. I’m so looking forward to the next year. Here’s to 26!
